So it seems I owe you a juice fast recap. After Sunday’s blood sugar crash I took my own advice and stuck with just juice for breakfast and had real food for the remainder of the day; which was the case for the whole week. I am still off meat, but am consuming dairy and eggs in much smaller quantities (from humane certified and small family farms). I feel good – I’ve been sleeping really well and have plenty of energy in the morning, even without coffee.
Now that we’ve juice talked, let’s get into the exact opposite of juice: flourless chocolate cookie sandwiches with a peanut butter and cream cheese frosting middle. These go down easy, too easy if I’m going to be completely honest. They are light and airy and the dark chocolate keeps them from being overly sweet.
