You Need a Casserole

You do, trust me on this one. Cool nights need to be offset with warm, comforting foods. Long days need to be offset with uncomplicated meals. The kind that take no time to process or decipher. No trendy flavor profiles, no uppity anything. Just real, simple food.

I was in the mood for just that, so I went straight to the source. The Southern Living Cookbook. Each year they issue one with every recipe they put out that year (mine is from 2009). I love that it is organized by month, which means you can cook seasonally. Once I came across the Black bean-Chicken-Cornbread Casserole, I knew I had found what I needed.

The recipe is crazy simple and just as delicious. Brown some chicken, add the veggies, and combine with a massive amount of black beans. Transfer to a baking dish, sprinkle with cheese, and top with cornbread batter. Bake on 350 until golden and boom, dinner is served.

I may or may not have added a spoonful of sour cream post-photo. I may or may not still be trying to figure out all that is my camera and Photoshop. I may or may not be in need of a tripod until I can quit my job and take pictures in the perfect late-morning hours every day. Until then, you’ll just have to be patient, okay? Thanks in advance.
