Overnight Oats, Breakfast’s Best Friend

I’ve seen many recipes for overnight oatmeal floating around the blogosphere and, once I figured out how you eat them, I wanted to come up with my own recipe. They’re ridiculously easy and delicious–you just combine the mix the night before, let it sit in the fridge overnight, and in the morning you can eat them cold, or microwave them for a minute, then top with all kinds of goodness. This combination is also a filling, substantial, and healthy breakfast; which makes for a good morning for me!

All the topping possibilities! I went with peanut butter, blueberries, and blackberry jam.

Overnight Oatmeal: (serves 2)

Night Before Mixture:
1/2 cup steel cut oats
1/4 cup vanilla Greek yogurt
1/4 cup 1% milk
Sprinkle of cinnamon
Sprinkle of nutmeg

For the Morning:
1/4 cup 1% milk
Toppings of choice

Combine ingredients in a bowl, stir, cover, and let sit overnight in the refrigerator. In the morning, add in another 1/4 milk, stir, and microwave, in 30 second increments for about a minute and a half, top with whatever you like and enjoy! (I highly recommend a little peanut butter!)
