This week’s recipe is semi-homemade, which makes it super quick and easy, but also really healthy. That should redeem me from the cake and pie posts, right??
Pancakes are a breakfast favorite in this household. It’s fun to go out to brunch and indulge now and then, but I feel better when my pancakes contain some beneficial ingredients, and therefore, can be eaten more often, sans guilt. So, for this week I took Fiber One pancake mix and added my twist while still keeping it healthy. In addition to the mix, all it took was an over-ripe banana, a heavy sprinkle of cinnamon, and sugar-free pancake syrup.
Cinnamon Banana Pancakes (serves 2)
Non-stick cooking spray
1 cup Fiber One Buttermilk Pancake Mix
2/3 cup Water
1 over-ripe banana, sliced
1/2 tbsp cinnamon
1/2 cup sugar-free pancake syrup, divided.
Heat pan to medium-high and spray with cooking spray.
In a medium bowl combine pancake mix, water, cinnamon, and sliced banana. Mix well with a fork until combined.
Measure 1/4 cup scoops into hot pan. Cook until bubbles start to form on the outside of the pancake, flip, and cook other side until golden brown. Makes approximately 5-6 pancakes.
Top with sugar-free pancake syrup and dig in!
