Recipe of the Week!

This week’s recipe is an easy summer classic. For us, and most people I know, warm weather means grilling out. Food just tastes better when grilled on your back porch. I’m not sure which item was the star of this recipe, the grilled chicken with Trader Joe’s All Natural BBQ sauce, or the sweet, grilled corn on the cob. Regardless, these two items have become a warm weather favorite. The dish was complete with a bit of  quick and easy instant mashed potatoes. I know that homemade mashed potatoes are are better and not difficult to make, but sometimes you can’t beat a five-minute side dish!

Summer staple.

BBQ Grilled Chicken with Grilled Corn and Mashed Potatoes (serves 2):

Ingredients:

(2) 4oz boneless, skinless chicken breasts

salt

pepper

4 tbsp Trader Joe’s All Natural BBQ Sauce

2 ears of corn

2 tsp buttery spread (I like Smart Balance with flax)

1 pkg instant mashed potatoes (only half will be used when serving)

Directions:

In a small casserole dish, season uncooked chicken breasts with salt, pepper, and 2 tbsp BBQ sauce. Cover with plastic wrap and allow to marinate for 20-30 minutes.

Peel back husks on corn and remove the silk. Coat each ear with a tsp of buttery spread, salt, and pepper. Replace the husks and wrap in foil.

Grill chicken until done and corn until tender, approximately 20-25 minutes.

Cook potatoes according to package directions.

315 calories, 6g fat, 45g carb, 14g sugar, 3g fiber, 25g protein
