Recipe of the Week!

This week’s recipe is a healthy twist on a comfort food classic– Meatloaf! I based my recipe off of Jessica Seinfeld’s turkey meatloaf in Double Delicious and what I had available in the fridge. There were some Italian seasonings in the ‘loaf and instead of mashed potatoes, my traditional meatloaf pairing, I made mashed cauliflower and peas. For something that was somewhat ‘off the cuff’, it turned out really well and I will be making it again soon.

Healthy Comfort Food, who knew?

Italian Turkey Meatloaf with Cauliflower Puree and Peas– (serves 5)


For meatloaf:

Non-stick cooking spray

1.25 lb lean ground turkey

1/2 tsp garlic powder

1/2 tsp salt

1 cup Italian seasoned panko breadcrumbs

1/2 tbsp Worcestershire sauce

1 large egg

1 egg white

1/2 cup carrot puree

1/2 cup cauliflower puree

1/4 cup spaghetti sauce

For cauliflower mash and peas:

2 1/2 cup cauliflower puree

1 lb p frozen peas

3/4 cup 1% milk

0 calorie spray butter

Preheat oven to 375. Coat loaf pan with non-stick spray. Mix all meatloaf ingredients into a large bowl, stirring to combine.

Press mixture into loaf pan. Top with spaghetti sauce. Bake approximately 55 minutes.

Combine cauliflower mash and milk in a saucepan, stirring occasionally. Spray with butter and season with salt and pepper to taste. Heat frozen peas according to package directions.

290 calories, 10g fat, 23g carbs, 8g sugar, 7g fiber, 30g protein
