There are few flavors that taste more like Christmas than gingerbread. Spicy, warm with a hint of citrus, and only made that much better when smeared with cream cheese. But gluten-free gingerbread? That was uncharted territory for me. The few gluten-free cakes I have tried before tasting more like cornbread than cake, which leaves a little something to be desired. It was nerve-wracking, but exciting at the same time.
I was inspired by no other than Joy the Baker. I only made a few minor adjustments, for allergies’ sake–Bob’s Red Mill All Purpose Gluten-Free Flour and additional molasses in place of the honey. The taste was divine… and the gingerbread men sprinkles didn’t hurt.
Gluten-free or gluten-full, you need to stop what you’re doing and make these cupcakes for Christmas. Friends, co-workers, the cat lady next door… they all need a taste.
P.S.– Nobody could tell they were gluten-free!
As my grandmother would say “you put your foot in that” the cupcakes were amazing and I definitely did not miss the gluten!
